But, I also don’t force him to eat something he won’t. Overtime, I noticed he eventually eats it or I find other ways to serve it to him when I can. And, this is just another way of serving avocado to him :) If your toddler doesn’t like avocado like mine I highly recommend trying this recipe 🙌 it’s so easy to make and you can’t even taste it in the recipe! They’re refined sugar free, gluten free, dairy free, vegan, paleo, whole30, LA girl friendly and honestly whatever other labels you want to put on them. I’m calling them delicious and I may or may not have eaten my body weight in them while developing this recipe. These were inspired by a certain very trendy grocery store in LA / Beverly Hills. Erewhon 👀 I’m sorry to say, mine are better and a fraction the price. Ingredients: 2 ripe bananas 6 fresh dates, pitted (I love @rancho_meladuco_date_farm) 1/4 cup almond butter 1 tsp Himalayan medium grind or kosher salt 1 tsp Ceylon cinnamon 20 oz unsalted walnuts and/or pecans (I do half and half, separately) *1 tsp each maca and mesquite powders (these are in the Erewhon version for nutritional purposes, but are entirely OPTIONAL and will have negligible impact on flavor) Preheat oven to 300°F. Line 2 baking sheets with a sheet of parchment. 1️⃣ Purée all ingredients, except nuts, until smooth. You may need to add a teaspoon or two of warm water to help the thick mixture purée. This can be done in a blender, container with an immersion blender, or a food processor. 2️⃣ In a large bowl, combine half the nuts with half of the purée and stir until the nuts are evenly coated. Pour onto one of the two parchment lined baking sheet and spread into an even single layer -make sure no nuts stay clumped together. Repeat with the second half of nuts and batter onto the second baking sheet. 3️⃣ Place both trays in middle racks of your oven for 20 to 30 minutes. Switch the trays and rotate halfway through. Bake and the nuts begin to get fragrant and turn light golden. A shorter bake will produce a more banana bread like nut that will be a little softer and chewier (my favorite), a longer bake will produce a crunchier nut that will lose a little bit of the banana flavor. These are Lex’s favorite and you heard him, these are better than the store bought! 1 8 ounce block sharp cheddar cheese, finely shredded 1 cup all purpose flour 1 tsp salt, plus more for topping 1/4 cup unsalted butter, cubed, room temperature 2 tablespoons whole milk (cold) 1. Preheat oven to 325°F and line baking sheet(s) with parchment paper. 2. ��Add the cheese, flour and salt to a food processor and pulse several times. You can also use a stand mixer fitted with a paddle attachment. 3. Add in the butter and pulse a few more times, until the dough is dry and crumbly. 4. ��Add in the milk, then pulse several more times. Test your dough by pressing it between two fingers to see if it holds together. If it does not, pulse a few more times and test again. 5. ��Transfer to a lightly floured surface. Divide the dough into two pieces and roll each into a very thin (1/8 inch or less) 10x12-inch rectangle.  6. Using pastry wheel or a knife, slice into 1-inch squares. Use the flat end of a skewer to poke a hole all the way through each cracker. 7. Arrange your squares onto your lined baking sheet and sprinkle with flaky sea salt. 8. Bake for 17-20 minutes, until the edges turn a deep golden brown and they puff slightly. Let cool and enjoy! 9. Crackers will keep for up to 1 week in a sealed container at room temperature.
