You’ll need:
1 grain-free tortilla (burrito size)
3 eggs
sliced sweet peppers
sliced cherry tomatoes
seasonings of choice: I used salt, pepper, garlic, dried basil and nutritional yeast

1. Add your tortilla to a cake pan (I used a 9” round).
2. Crack three eggs in the center.
3. Add peppers, tomatoes and seasonings of choice.
4. Bake in the oven at 350 F for 10-15 minutes (I baked mine for 15 minutes).
5. Remove from oven, let cool, slice and enjoy! 💛

I used hash browns but next time I’m going to make with frozen breakfast potatoes. So good!
