Line a baking sheet with parchment paper.⁣ ⁣ Stir together softened butter, garlic, and parsley until smooth and creamy.⁣ ⁣ Place the thawed puff pastry on a lightly floured counter. Gently roll out the dough to about 12 inches by 10 inches.⁣ ⁣ Spread the garlic butter over the pastry. Sprinkle the parmesan over the butter. ⁣ ⁣ Starting with the long end, roll the pastry into a log. If the pastry feels warm and soft, chill for 20 minutes. If the pastry still feels cool to the touch, proceed to the next step.⁣ ⁣ Cut into pieces, about 1 inch and place onto the baking sheet. These Pinwheels are a great party food based on these classic sandwiches🌀🌀🌀 Corned beef, swiss cheese, dijon and sauerkraut are rolled up in puff pastry, cut into spirals, and baked until golden. Served with extra Thousand Island or Russian dressing for dipping and you have a great dinner idea. Serve with a salad or a side veg and you are good to go! . . . Reuben Puffed Pastry Pinwheels with Thousand Island Dressing . . 1 tablespoon all-purpose flour 1 (17.5 ounce) package frozen puff pastry, thawed 1 (8 oz) jar Dijon mustard 1 cup sauerkraut, squeezed to get excess water out  1 lb sliced pastrami or corned beef  1 lb sliced Swiss cheese 1 egg, beaten 2 tbls caraway seeds  Thousand Island or Russian Dressing Dust a flat work surface lightly with flour. Unroll puff pastry sheets; roll each out into a 10x15-inch rectangle. Spread a thin layer of Dijon mustard over puff pastry. Cover with a layer of pastrami slices, followed by a layer of Swiss cheese slices. Sprinkle evenly with sauerkraut. Roll puff pastry up tightly like a jelly roll. Wrap in plastic wrap and refrigerate for 1 hour, or up to 24 hours. Preheat oven to 400F.  Line 2 baking sheets with parchment paper. Slice puff pastry rolls into 1” slices and lay on the baking sheets. Brush tops with beaten egg and sprinkle with caraway seeds. Bake until lightly browned, about 20 minutes.
