With 20g of protein and 10g of fibre per small portion these chocolate protein puddings are a great option for a quick breakfast or dessert. They are easy to make ahead and great for meal prep as will last in the fridge for about 3 days. They’re refined sugar free and just sweetened with the banana and contain no protein powder. Lemon and Blueberry Chia Pudding By Georginaelizat Since you guys loved my last chia pudding, here is a fresh, summery version. This is fruity, sweet and involves the best pairing ever - lemons and bluebs. A quick and easy breakfast or snack, which tastes like dessert. Ingredients Serves 2 1/2 cup / 86g chia seeds 2 tbsp maple syrup 1/2 tsp lemon or vanilla extract 1.5 cup / 325ml plant milk 1/2 lemon - juice and zest 1.5 cup / 310g vegan yoghurt 3/4 cup / 75g frozen blueberries Instructions 1. Combine your chia seeds, milk, maple syrup, extract, lemon zest + juice and 1 cup/ 230g yoghurt together. Leave to set for at least 2 hours, or overnight. 2. Put your frozen blueberries into a microwave for 1 minute, until they are fully defrosted and a sauce forms.
