It's something of a mid-week staple round at my place. Easier than risotto, and with no need for all that stock-stirring nonsense. Just fry up a bit of onion and garlic, add a few chunks of chorizo, chuck in some chicken, or prawns, or both, and some short-grain rice – Spanish if you've got it, or whatever else comes to hand. Then cover with stock and a bit of saffron (optional), and 20 minutes or so later, you've got a lovely paella.

Croque Apero : Pour 16 mini croques : 8 tranches pain de mie, 3 tr. jambon, 5 tr. emmental ou autre. Chauffer four position grill. Avec emporte-pièce découper 32 disques pain. Faire idem avec  jambon et fromage, 16 disques de chaque. Toaster pain au four, retourner à mi-cuisson. A la sortie du four assembler les mini-croques. Remettre quelques instants au four. Servir chaud. Remplacer jambon par saumon fumé et fromage frais assaisonné avec aneth, sel, poivre.
