Always learning! Im super interested in the various breeds of heritage pork and how they factor into charcuterie. See this @ribeye_raulito ? #Repost @home.charcuterie Mangalitsa & Acorn-Fed Iberian . Comparing two Coppas. Probably the top two premier breeds for charcuterie. Very different in origen and looks (outside and literally inside). Mangalitsa are wooly pigs originally from Hungary. The Iberian pigs are well... from the Iberian peninsula (Spain /Portugal) they are basically hairless.
Mutton dressed as ham: Strange-looking 'sheep' that are actually woolly PIGS ... hairy bacon sounds like something Michelle will just about loose her barely hanging-on, freak-out grip over ... I wonder if I can get one in time for my grand-daughter's Kindergarten Class's next "Show and Tell" activity?
