Important Notes - 1. temperature of butter is key, it should not be melted, it should’t be too cold, it should be pliable and room temp. Cutting butter into even sized cubes helps in them evenly heating and hence not melting. 2. Sift icing sugar twice before using in recipe 3. White chocolate burns very quickly so melt it at very low temperature. If using microwave, melt in 10 second bursts stirring between each heating cycle. If using double boiler, make sure flame on stove is at the lowest, make sure no water comes in contact with the chocolate and keep stirring continuously. 4. V IMP - the oil in this recipe is optional. It is to help with melting white chocolate. If you pour oil on chocolate and then melt it, chances of it burning are much lesser whether you’re using a microwave or double boiler, so i recommend it. 5. When you’re whipping the buttercream, make sure you’re whipping at lowest speed on hand/stand mixer. Make sure you whip it for as long as mentioned in the recipe to get the correct texture on your buttercream. 6. When you’re adding the ganache to the butter, make sure it is not very hot to the touch. It should be either slightly warm or your body temperature. Don’t make the ganache too far in advance and have it sit outside for long otherwise the sugar will crystallise and become lumpy. Method - 1. Whip butter on lowest speed for 15 minutes. 2. In a bowl, mix milk and cream, heat till it scalds (not boil). 3. Mix milk-cream mix with twice sifted icing sugar little by little so no lumps form. 4. Add melted white chocolate and stir to form ganache. 5. Check temp of ganache, shouldn’t be too hot. Pour into the whipped butter while whipping on low speed for another 5 minutes. 6. Ingredients: - 2 cups unsalted room temperature butter (4 sticks or 452g) - Pinch of salt - 1/2 tsp vanilla extract - 4 1/2 cups powdered sugar (495g) - 1/4 cup cocoa powder (24g) - 1/4 cup + 2 tbsp heavy cream (87mL) Directions: - In the bowl of your stand mixer fitted with a paddle attachment (you can also use an electric hand mixer), whip the room temperature butter on medium speed for ~5 minutes until it is pale in color. - Add a small pinch of salt and the vanilla extract to the bowl. Scrape down the sides of the bowl with a rubber spatula, and continue mixing for 1 minute. - In a separate bowl, whisk together the powdered sugar and cocoa powder (I like to combine them before mixing them with the butter). - Add this sugar/cocoa mixture to your stand mixer along with the heavy cream. Mix on medium speed for 8 minutes until the buttercream is smooth. Be sure to scrape your bowl down halfway through mixing to ensure that everything is well incorporated!
