Saw a pink pineapple and figured id wrap it with some pork ribs. But ive done that with a regular pineapple before, so last minute decided to wrap pork belly around it. I shaped the pork belly to the height of the pineapple. Skinned the pineapple and wrapped the pork belly loosely around it. Dont want it too tight as the pork will shrink during the cook. Scored the fat side as it is the outer part of the cook. Seasoned both sides of the pork heavily with my pork and poultry with honey. Installed a @meatermade probe to track it for an internal finishing temp around 200° or pretender. 275° the entire cook without wrapping it.
