Basic Caramel: hardens upon cooling. 1 c. sugar; ¼ tsp. fresh lemon juice; Water+put pastry brush; In 2-quart saucepan, stir sugar, lemon juice,+¼ c. cold water. Brush down sides pan with water to wash away sugar crystals. Boil over med. heat, occasionally brushing down sides pan, til starts to color around edges, 5 to 8 min. Basic Caramel
