Creamy Broccoli Pasta
2 Tbsp Butter•1/2 a Yellow Onion, diced small•16 oz. Fresh Broccoli•3 Cloves Garlic, minced•1+1/2 tsp Kosher Salt • 1/2 tsp Pepper•2Tbsp Flour•2 Cups Milk• 4 oz. Cream Cheese•16oz Ditalini Pasta (or pasta of choice)•1/4 Cup Grated Parmesan•1/2 Cup Pasta Water. 1. Boil pasta. 2. Preheat a separate pot over medium heat & add butter. Once butter is melted add onions and sauté for 2-3 mins until they’re starting to become tender and translucent. 3. Add broccoli, garlic, salt, pepper and sauté for 3-4 more mins until broccoli is almost tender. 4. Add flour and mix in with veggies. Cook 1min. then stir in milk add cream cheese then stir until melted 5. Drain and mix pasta with sauce and stir in parmesan. Cook 2-3 more mins. stirring constantly add pasta water if needed. Enjoy!

The best pickled onions😍🧅 These are going on anything savoury I’m eating atm they’re ridiculously quick and easy to make so I always have a jar in the fridge ready to go! Recipe: 2 large red onions (or 3 small) 200ml water 450ml apple cider vinegar or white vinegar (or a mixture of both) 2.5 tsp salt 100g white sugar 2 tsp coriander seeds (optional) 2 tsp mustard seeds (optional) 2 bay leaves 2-3 garlic cloves, peeled -Halve your onions (from root to stem) then slice them very thinly. -Stuff in a jar along with the garlic cloves, coriander seeds and bay leaves. -Heat up the water and vinegar with the sugar and salt for 2-3 minutes until they’ve dissolved and the liquid is hot - feel free to taste at this point and add any more sugar or salt to your preference! -Pour this over the oni
