Harissa Sardines SERVES: 6 One of the most evocative smells has to be that of sardines cooking over a gentle wood fire. Fresh sardines – beautifully sweet with that gorgeous natural saltiness – are unbeatable. Harissa is a big, bold, potential bully of a flavour, but when used sparingly it is divine with fish. Cook the sardines on the barbecue or under a grill and serve with a wedge of fresh lemon and a sprinkling of chopped parsley.

Slash the sardines three or four times on both sides, season with salt and pepper and then rub thoroughly with the harissa paste. Drizzle with the olive oil and cook…

Eggs ‘Benefit’ with Mustard Sauce SERVES: 1 My favourite brunch dish is Eggs Florentine, a vegetarian variation on Eggs Benedict. It’s a toasted English muffin, topped with wilted spinach, two poached eggs and LOADS of sunshine yellow hollandaise sauce. But hollandaise is fiddly to make at home and very heavy on the butter. So I thought I’d invent a Fast Day version, using simple mustard cream.

Bay Leaf Broth with Venison Meatballs SERVES: 4 This soup will keep you warm in the colder months. Venison is an excellent meat to try, if you haven’t already: it’s really tasty and also quite lean. The idea for the broth came from Kate’s parents’ garden, where a bay tree happily grows like mad. We get to dry huge bunches, ready to use in as many soups, stocks and stews as we can make.

Lemongrass and Ginger Pork with Noodles SERVES: 1 The Eastern flavours in this dish go so well with the pork – and it’s a really satisfying supper dish that would also work very well, doubled up, for a casual meal with friends. Rice noodles are a good option if you’re avoiding gluten, though do check the soy sauce if you’re very sensitive, as traces of wheat gluten can remain in the finished sauce.
