I set a timer for 10 minutes during my sons nap and that’s all it took to wash, prep, and put the veggies in the oven (while filming), and then everything just gets a quick blend! I’ve been having this as a quick lunch with some olive oil and a little extra dollop of Greek yogurt, it’s super good! You have to enjoy cottage cheese though, I do not find it super detectable (just creamy tasting) but my husband who is a cottage cheese hater did sniff it out. Honestly I’ve made this soup before with lots of different types of veggies. I’ve used eggplant, I’ve used celery, I’ve added broccoli. I think you can kinda play with what you have! You can also add way more seasonings, like cumin and paprika if you want to play up the savory vibe or more cheese and Italian seasoning! We're just going to give this a snip right on top here in our skillet. This is going to be an easy dinner. You guys are going to love the flavor combo in this one. So good. Next, we're bringing in just a tablespoon of soy sauce. This is a great flavor, delish, and we have a tablespoon of our sesame oil. Wow. Love the way this is smelling. We are bringing in six cups of our low sodium chicken broth. You can also use beef or veggie broth if you prefer. Yum. So it's a total of six cups. And we have two bags of our chicken ramen. We're just going to remove our flavor packets here. So we have just the noodles. Great. And we're going to bring in two more cups of water. To help moisten those noodles and cook them up. Cuz they're going to expand and get so delicious. I love this dumpling and noodle soup. This is totally up my alley. So delicious. And of course I know that you love garlic so we're going to add a little bit of garlic in it. Yay. You guys can use minced garlic if you have it. That is always a great combo and this will really get really flavorful with some ginger. If you have fresh ginger, use that. Otherwise, you can use the powdered. Wow. Mm hmm. You guys, let's give this a stir. Wow. I love this flavor combo. This is an easy dinner. That is delicious. We're just going to get those noodles submerged. It's nutritious and delicious this one. Okay, now that those noodles are submerged, we've got our veggies in there. We're going to go ahead and add our lid and then we will be back. Wow you guys. Look at this soup. Wow. It is smelling so great. This has been simmering for about 30 minutes or so. Just enough to get the noodles softened and our soup simmering. This looks incredible. Okay. So before we serve this up I am going to add a little bit of cilantro. Have some fresh cilantro leaves. I'm just going to snip sniff a little bit. That fresh greenery on here. So good. Let's eat this. I cannot wait to try this. This is such a great soup for a cozy cozy day. Wow. Oh my goodness gracious. I love the combo of the dumplings with the noodles. So good. Some long noodles. Okay. It's very steamy. Be very careful. I'm going to go ahead and try this. Want one of these dumplings. Oh yes. Yes. Wow. That was good.

Erica Baty on Instagram: "For anyone who wants to start the new year wasting less, saving more and eating more flavorful food!! So much better than storebought AND you get to be resourceful with veggie scraps that might otherwise be doomed for the trash. I eat a lotttt of vegetables and whenever I have peels, parts, scraps that aren’t edible I place them in a large gallon Ziploc and keep it in the freezer. Over the course of several weeks I easily fill the bag to the brim with veggie pieces that would be great in broth. Then I bust out the stockpot! Simply add your veggie scraps, fill with cool water and add any other aromatics like ginger, thyme, bay leaves, black peppercorns and a tablespoon or so of kosher salt. Bring to a simmer and reduce by about half, this will take 4-5 hours.
