Pan-Roasted Chops with Blackberries & Sage:: 1 Tbs butter, 1 tsp minced fresh sage leaves, 1 lb goat loin chops or rib chops each about 1/2 inch thick, 1/4 tsp ground cinnamon, 1/2 tsp salt, 1/4 c whole milk, 1/2 tsp freshly ground black pepper, 1/4 c blackberries, 1 small shallot minced, a crunchy baguette, 2 Tbs dry white wine or dry vermouth.
