789K views · 66K reactions | reese’s peanut butter klondike bars! they’re gluten free, dairy free, and refined sugar free, so easy to make, and soo dang good! ice cream layer: •1 can (13.5oz) full fat canned coconut milk •1/2 cup peanut butter (or you can use 1 cup peanuts if you have a high speed blender) •1/3 cup raw honey or pure maple syrup •1 tsp pure vanilla extract •1/2 tsp salt (use 1/4 tsp if using salted peanut butter or peanuts) chocolate shell: •10oz dark or semi-sweet chocolate (i used dairy free and refined sugar free) •2 tbsp coconut oil instructions: 1. add the ice cream ingredients to a high speed blender and blend until smooth and creamy. pour the mixture into a 8x8 square pan lined with parchment paper and place in the freezer until frozen solid, at least 8+ hours. 2. after 8+ hours, melt the chocolate and coconut oil together in the microwave or on the stovetop using the double boiler method. 3. remove the ice cream layer from the freezer and slice it into 16 squares (i recommend putting half of the squares back in the freezer while you coat the first half in chocolate so they don’t melt). 4. coat each ice cream square in melted chocolate then place on a tray lined with parchment paper. place in the freezer until the chocolates shell has hardened, then enjoy! notes: •to make a half recipe simply cut the recipe in half and use an 8X5 loaf pan instead — that’s what i did for the recipe video. •make sure the ice cream layer is frozen solid before dipping in melted chocolate. •let the melted chocolate cool for several minutes before coating the ice cream bars. #klondikebar #klondike #reesesklondikebar #reesespeanutbutter #peanutbutterchocolate #dairyfreeicecream #veganicecream #refinedsugarfree #healthydessert #dairyfreedessert #vegandessert #glutenfreedessert | Ruth Anne Bigley | French Fuse · Space
