This is the BEST Carrot Cake recipe I have ever made!!! It's from Susan Branch's  cookbook, Heart of the Home. I make the cake in a 9x13 baking pan instead of three layers and it turns out wonderful. This would be a lovely cake for your Easter gathering. Be careful though....you will want to have more than 3 slices. :))
