BLUEBERRY OAT BARS
Ingredients
1/3 cup maple syrup
2 tbsp coconut oil
1/3 cup peanut butter
1 cup oats
1 cup oat flour
1 cup blueberries
1/4 cup water
Method
Grease or line a loaf tin.
Simmer blueberries and water for 5–7 minutes, mashing slightly.
Mix remaining ingredients in a bowl until it holds together (adjust peanut butter or oat flour as needed).
Reserve 1/4 cup of the mixture for topping.
Press the rest into the loaf tin.
Spread the blueberry mixture on top.
Crumble reserved mixture on top.
Refrigerate until set.
