300 g fagioli bianchi di Spagna (o cannellini) 100 g pomodorini datterino 1 spicchio di aglio 4 foglie di basilico 1 cucchiaino di tahina 1/2 limone q.b. olio evo q.b. sale fino q.b. origano secco Preparazione Tagliate i pomodorini a metà. Sbucciate lo spicchio di aglio. Fate rosolare in padella l’aglio con l’olio di oliva poi aggiungete i pomodorini e fatelo cuocere. Condite con origano secco e basilico fresco. In un mixer mettete i fagioli (ben sgocciolati e sciacquati dall’acqua di vegetazione) la tahina, il succo di limone, olio evo e i pomodorini. Frullate fino ad ottenere una consistenza cremosa. L’hummus è pronto!

Enjoy a delicious and light summer meal with caramelised fennel and butter beans. Perfect for two! Ingredients: - 2 medium fennel, cut into wedges - 700g jar butter beans, not drained - 2 shallots, diced - 2 garlic cloves, chopped - 1 tsp fennel seeds - 1 tsp thyme leaves - Knob of butter - Lemon zest and juice - Olive oil - Salt & pepper Instructions: 1. Sweat shallots in oil, add garlic and fennel seeds, cook 3 mins, then add beans. Cook until tender, add lemon. 2. Blend 2/3 of beans until smooth, add water if needed. Mix fennel fronds into remaining beans. Season. 3. Heat oil in a pan, cook fennel until tender with thyme, butter, and salt. 4. Spread bean purée on a plate, top with fennel and remaining beans.
