Baking with Coconut Oil!
Blueberry Muffins! Ingredients: 2 1/2 cups almond meal, 1 tbsp coconut flour, 1/4 tsp salt, 1/2 tsp baking soda, 1 tsp vanilla, 1 tsp cinnamon, 2 tbsp honey, 1/4 cup coconut oil , 2 eggs, 1 cup blueberries. Method: Preheat oven to 350. In a mixing bowl dry ingredients and stir to combine. Pour in coconut oil, eggs, honey and vanilla; mix well. Fold in blueberries. Distribute into muffin tin. Bake for 20-25 minutes. Enjoy!
Low Carb No Bake Cookies 4 Tablespoons Coconut Oil Or Melted Unsalted Butter ½ cups Natural Peanut Butter 6 Tablespoons Unsweetened Cocoa Powder 6 Tablespoons Splenda (granular) Or Another Granular Sweetener ½ teaspoons Vanilla Extract ½ cups Finely Shredded Unsweetened Coconut ½ cups Pecans, Chopped
Chocolate Coconut Flour Cupcakes w/ Espresso Buttercream (Low carb and Gluten Free)...I modified a bit by leaving out the espresso, using coconut oil & coconut milk, plus a couple tbsp of splenda + double the liquid stevia for added sweetness...made them into mini chocolate donuts! Delicious without frosting & with it!
