Grilled Eggplant With Tomato And Feta Cheese -- this is incredible! I make with goat cheese/ricotta instead of feta. The basil garlic sauce is fantastic! I make extra and put it on some pasta which I put under the yummy eggplant sandwiches.

avocado tomato salad would be a lovely accompaniment to grilled. 2 ripe avocados, 2 large ripe beefsteak tomatoes, 2 tbsp fresh lemon juice, 3 tbsp chopped cilantro, salt and pepper to taste. slice your avocado.
This will be our side dish with dinner tonight! Tomato, Squash & Feta Gratin -love having a different recipe for squash and zucchini. Great for company because it adds so much color. Would double the feta next time to 4 oz.
