7 INGREDIENT VEGAN - KFC MUSHROOMS 🍗 credit: @nomeatdisco This is something that you just can’t get eating plant based. The options are @kfc_uki are limited and the ones we do have are really not that good at all. But no worries because it’s super easy to do at home yourself. Ingredients 1 punnet of oyster mushroom clusters Frying oil Salt For the wet batter : Half a cup corn flour Half a cup plain flour 2 tbsp spice blend (I used @oldbay seasoning, oregano, smoked paprika, onion powder, lots of pepper, salt) 3/4 cup plant milk For the dry batter: Half a cup corn flour Half a cup plain flour 2 tbsp spice blend (I used @oldbay_seasoning , oregano, smoked paprika, onion powder, lots of pepper, salt) 1 tbsp plant milk Method: 1. Start by mixing together the wet ingredients and dry in
lion’s mane mushrooms ciabatta rocket crispy onions Mayo: 2 tbsp wholegrain mustard 2 tbsp vegan mayo handful chopped parsley Marinade: 100ml beetroot juice 2 tbsp dark soy sauce 1 tsp smoked paprika 2 tbsp maple syrup or agave 2 tbsp olive oil 1 tsp brown miso paste pinch salt 1 tsp garlic powder Prep the marinade in a large tray. Gently fry the mushrooms in oil on each side for 5 minutes, then start to slowly press down until golden brown on each side. Soak in the marinade for 30 minutes - 2 hours. Prep the pickled onions and mayo (or get store bought). Fry the marinated mushrooms in oil on a medium - high heat until charred. Load up the sandwich and enjoy!
RECIPE (3 servings, 35min prep time): -1 lb (455g) carrots, peeled and chopped Cook in water until soft, then mash either by hand or with a blender (gives a better and smoother result) -2 to 2 1/4 cups (260-290g) flour -a pinch of salt Add to the carrot mash and knead until you get a dough ball. On a floured surface cut in 4, roll into snakes and cut into big or small gnocchi. Boil in salted water until they start floating to the top (~3mins). Serve with your favorite sauce e.g. pesto.
